I have wanted a Food Dehydrator for some time and had begun researching which one to buy. So when I read my sister’s email a couple of weeks ago, “What do you want for Christmas?” I replied with a model number. Sure enough, Santa promptly delivered the much-anticipated Food Dehydrator… thanks to my sister & her husband! For my first batch, I sliced-up fresh star fruit, papaya and banana. These fruits were all from my trees. I also sliced some fresh carrots; and lastly I added some frozen string beans. I assembled all the pieces on the trays, stacked them on top of each other, put on the top, set the temperature and turned the gizmo on. I checked the progress every few hours. It was not a quick process. I was surprised that it took approximately 12 hours for everything to be fully dried.
Of all my friends and family who tasted the assorted foods I dried, most people liked the star fruit the best. It just had a great texture and taste. It was a huge hit. The papaya and banana were also excellent. Now for the failures: the carrots felt and tasted like leather; and the string beans had a strange chewy consistency. I’m not sure what I did wrong with the carrots. As for the string beans, I’m going to try fresh beans next time, instead of frozen, to see if this makes a difference.
The Day 2 Breakfast recipe I made from The 22-Day Revolution is Lean Green Juice. The ingredients listed in the book are:
4 stalks of kale
1 handful of spinach
2 Granny Smith apples (cored)
2 pitted dates
1 frozen banana
I used fresh lemon from the little Meyer Lemon Tree my aunt gave me. It’s a “miniature” plant that I have growing in a container on my patio, but the fruit is regular size. The first time I made this juice I prepared it exactly as described. It was very tasty. The second time I whipped it up, I substituted Star Fruit for the apple just because I have a ton of Carambola in my yard. Also very tasty. Thumb up on this recipe, which can be a healthy meal-replacer if you’re trying to lose weight.
The first recipe I made from The 22-Day Revolution was the Day 1 breakfast: Oatmeal with Banana and Blueberries. Porridge — as I fondly call it — is one of my “go to” breakfasts, which gives me energy until lunchtime. I always blend in some chopped-up fruit to sweeten it a bit. The easy recipe in the book contains:
1 cup almond milk
½ cup quick oats
½ cup blueberries.
I made it with quick rolled oats (1-minute) and used only half a banana, which was plenty. A thumb-up on this recipe. Porridge power! And power to Paris…
My friends and all people in Paris, you have been on my mind constantly. You are in my heart. I dedicate my food preparation to you, my morning yoga, my picking up the leaves in the backyard, the sound of the wind chimes, all my happy thoughts and strength, my love. In a large blender add 2 cups blueberries and 2 ripe bananas. Then fill the rest of the blender with equal parts pineapple and water and/or ice. If you don’t have fresh pineapple, you can use pineapple juice instead.

The first bananas are growing on my Goldfinger Banana plant. This plant is approximately 12’ tall. When the high winds started in Miami due to a possible impending storm, I decided to cut the flower off so that the plant wouldn’t be so top heavy. Banana plants don’t do well in high winds; they tend to topple over. The flower weighed close to 3 pounds!
I love peanut butter—spooned straight out of the jar, on bread, in a pie, in sauce, and in a shake! The ingredients are non-hydrogenated peanut butter, very ripe bananas, fresh figs and soy milk. You can use a nut milk or dairy if you prefer.
I really like sharing my fruit concoctions. If you visit me at my house, chances are you’ll be offered a glass of whatever smoothie I have in the fridge. I lovingly serve them to my friends, family, neighbors and the workers who come to my house. In a conversation with my mother one day, about my fruit trees and the occasional smoothies I give the gardener, she laughed and said “you don’t make that GREEN smoothie for him, do you!?” What!? Is it against the 10 Commandments to give the gardener a green smoothie?
Today was the gardener’s day to do my yard and he was also going to plant a persimmon tree for me. I usually make a pitcher just for him and his assistant, with the fruits I have an abundance of, which are papaya and carambola. These are fruits they are familiar with and like. I decided that the tree-planting warranted a special smoothie: a green one! I made my new favorite recipe of carambola, banana & kale. I did go easy on them and put less kale than I normally do.
You should have seen the look on their faces when I handed them each a large plastic cup of the green goodness. They were confused. Drinking something green was not an experience they had had before. They drank it because it was a very hot day, they were thirsty and perhaps a little polite. Turns out they don’t EAT much green food, much less DRINK it.
Commandment #11: Thou shall not give the gardener a green smoothie.
Love smoothies! I drink some sort of fruit concoction every morning, usually made with at least 3 different fruits; so I get a whole bunch of different vitamins & nutrients in one glass. If I don’t DRINK fruit, I’ll EAT the whole fresh fruits throughout the day.
SMOOTHIE RECIPE: Blend equal parts strawberries and papaya, plus 1 or 2 bananas, with water and/or ice to desired consistency. If you want to make this as a shake instead, substitute the water/ice with milk or yogurt or ice cream (nut, soy or dairy–whatever your preference is).
Today I potted a Banana Plant for my friend Hilton. He moved to his house in December; and like me, he’s been more preoccupied with getting his garden in order than the inside of the house! I had posted a picture of Hilton’s Guava Tree a couple of weeks ago.
This Goldfinger Banana I’m giving him is a shoot I cut off from my mature plant. This is the best way to propagate a banana. Once planted in the ground it will grow to approximately 14’ tall and should fruit in approximately 15 months. I had planted mine (the mother plant) 15 months ago. It was the first plant I purchased for my house before I even moved here. It is now beginning to grow its first flower spike, which will soon turn into a bunch of bananas. Yay!
